Smashed Sandwiches for Breakfast!

These are fast, yummy, and great for a quick protein packed breakfast to get your day going. Kenneth made these most mornings when he was away in Afghanistan - he doesn't like eggs so this was a good alternative for him, but still allowed him to have a hot breakfast!

Melty, toasty, yummy smashed sandwich!

Smashed Sandwich (for 1)

Ingredients
1 English muffin
1 oz cheese (I like to use half Swiss, half cheddar)
2-3 slices of lunch-meat (Kenneth really likes cracked pepper turkey, I like honey turkey or half turkey, half ham)
1 slice of bacon, cooked to desired crispiness

Directions

  1. Pre-heat a panini press to medium/high heat.
  2. Split English muffin in half, put half cheese on bottom, half on top. Layer lunch-meat and bacon on the bottom half, and add the top half.
  3. Place sandwich on panini press, and cook 3-5 minutes or until well toasted and the cheese is melted.
If you don't have a panini press, just use a regular skillet on med/high heat, and flip after a couple minutes. Cook until toasted and cheese is melted.
