Sweet and Spicy Island Pork Tenderloin

This is a wonderful recipe that I originally found in our P90X nutrition book, and located it online here. There is the additional suggestion of turning the pork into a salad there (which I have made before as well, it's very good!) We made this as just a pork roast though and served it alongside some steamed veggies for a delicious and satisfying dinner. This pork is really good, my son and husband both absolutely love this dish. I used a thicker pork roast then called for in the recipe so I had to cook mine for about 1 1/2 hours to get it cooked all the way through. Just something to keep in mind when considering possible cooking time - 20 minutes is for a thin round pork tenderloin.

Spice rub, ready to go.

Rubbed the spice mixture over the roast.

Browned in hot oil in a large pan.

Mixed up the brown sugar with the Tobasco and garlic.

Added the brown sugar mixture to the top of the roast before putting it in the oven.

A little spicy and absolutely delicious!

Island Pork Tenderloin

Ingredients
16 oz Lean Pork Tenderloin
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon chili powder
1/2 teaspoon ground cumin
1/2 teaspoon cinnamon
1 tablespoons olive oil
1/4 brown sugar, packed
1/2 tablespoon fresh garlic, finely chopped
1/2 tablespoon Tabasco sauce

Directions
  1. Preheat oven to 350 degrees
  2. Stir together salt, pepper, cumin, chili powder, and cinnamon, then coat pork with the spice rub.
  3. Heat 1 tablespoon oil in a skillet over moderately high heat and brown pork, turning, about 4 minutes
  4. Stir together brown sugar, garlic, and Tabasco and pat onto top of tenderloin.  Place pork in a roasting pan and cook in the oven for 20 minutes or until cooked through and juices run clear.
