We received some pears at Christmas time and they ripened very quickly and I needed a way to use them and didn't really want to throw them in the freezer - plus we're always looking for ways to get our 15 month old to eat fresh fruits and vegetables where she can feed herself. She likes diced fresh pears, but we don't give her uncooked apples yet since they're a little bit firm still - so this was perfect!
It was delicious as a side with oven baked pork chops, and then again later I enjoyed it, warmed, atop some vanilla ice cream with some sugar cookie crumbles. Wonderful both ways. Lindsey liked it cold and ate it several times with her dinners!
Versatile and tasty - this is a great quick fruit compote dish!
Apple and Pear Compote adapted from Picky Cook
2 cups apple juice
1/4 cup cider vinegar
2 TBS brown sugar
2 medium apples, peeled, cored, small diced
2 medium pears, peeled, cored, small diced
1 tsp vanilla extract
- Combine all ingredients in a medium saucepan, over medium high heat. Bring mixture to a low boil and simmer until sauce reduces and the apples and pears reach desired consistency (I cooked mine for about 10 - 15 minutes.) Taste and adjust sweetness if desired. If you have too much sauce, you can drain it off, but it tends to thicken after cooled / refrigerated.
- Serving suggestion: serve as a side dish with pork or chicken, or warm with vanilla ice cream and a sugar cookie for a quick apple pie substitute!
