#BrunchWeek ~ Bacon and Egg Grilled Cheese Sandwich

I kind of have a thing about breakfast sandwiches - I love, love them. I don't really have a "go-to" sandwich that I make every time. Sometimes it's just buttered toast and a fried egg, sometimes I add different types of cheese, sometimes bacon, sometimes sliced tomato, sometimes avocado - mixing and matching. Typically though I toast the bread in the toaster, and don't pan fry it, so that was the biggest difference for me with this recipe.


This sandwich was perfection. It had sweetness from the bread (I just discovered the sandwich buns that are sweet Hawaiian bread - YUMM!), creamy richness from the delicious Cabot cheese, saltiness and chew from the bacon, and the perfect slight crunch from pan frying the sandwich in the bacon grease in the cast iron. Total indulgent meal, and completely delicious.


I could see whipping up a bunch of these for a brunch gathering, using different meats and cheeses and even breads, and wrapping each individually to keep them warm with a hand written label to share with family and friends (though if I was doing a large batch, I'd definitely pull out the griddle or panini press to finish them off)!

Bacon and Egg Grilled Cheese Sandwich
slightly adapted from Get Cookin

Ingredients

2 slices thick cut bacon
1 egg
1-oz slice Cabot White Oak Cheddar cheese
1 Sweet Hawaiian Sandwich Bun

Directions

  1. Heat a cast iron skillet over medium heat. Cook the bacon until it begins to brown and crisp, remove and set on paper towels to drain. Cook the egg in the bacon grease until it reaches desired "doneness". (I like mine fried with the whites set and the yolk still a little runny.)
  2. Place half of the cheese on the bottom slice of bread, top with egg, bacon, and remaining cheese. Place 2nd slice of bread on top.
  3. Cook sandwich in the same cast iron skillet on both sides until golden brown on both sides, and the cheese has melted.

  1. This is the sort of sandwich my hubby loves to make for his weekend breakfast! Yours is definitely more gourmet---I'll have to treat him to this before we gobble up all our Cabot cheese :)

    1. That cheese is SO GOOD!! My hubby has been working his way through it with a box of Triscuits - but I had to rescue some of it for these yummy sandwiches. :)
