Tuna Melt Sandwich


So I recently joined a group called Food Fight, and I totally misread the theme for November and just ready copy cat recipes, not fast food specifically. So I will miss out on the group this month, but I'll share this nonetheless! This is a New Jersey Diner style copycat Tuna Melt Sandwich and it was delicious!

I loved this meal. The flavors are very easy to adjust to your preferences. I always love adding celery to my tuna for some crunch, and those layers of cheese and juicy tomatoes was just perfection atop the crisped bread. I really liked this recipe for something different - and easy to whip up on a work night!


Tuna Melt Sandwich adapted from Genius Kitchen

Ingredients
2 (6-ounce) cans solid white tuna packed in water, well drained
1⁄4 cup mayonnaise (more / less to achieve desired texture)
1 -2 tablespoon fresh lemon juice
1 large celery stalk, finely chopped
1/2 TBS dried parsley
salt, to taste
lemon pepper to taste
4 slices bread (I used an artisan whole wheat - rye is recommended)
4-8 slices tomatoes
1 cup shredded mozzarella
4 slices swiss cheese

Directions
  1. Combine the tuna, mayonnaise, lemon juice, celery, and parsley in a bowl. Blend. Add in your desired amount of salt and lemon pepper. Refrigerate while you get the base ready.
  2. Preheat the oven to a hi-broil.
  3. Place bread on a baking sheet and place under the broiler for about 90 seconds or until bread begins lightly toasting.
  4. Remove from oven and divide tuna mixture atop the toasted bread. Smooth. Evenly distribute the shredded mozzarella, then layer on 1-2 slices of tomato, and top with a slice of Swiss cheese. 
  5. Return to the oven under the broiler for 2 1/2 - 3 minutes, or until cheese has fully melted and begins to brown lightly. 
  6. Serve immediately.
